Chutney is an important item in Uttarakhand’s food culture, among them Bhang ki chutney is loved by one and all alike. Let us take you through the process of making this delicious food item.
50 gram hemp seeds
1/2 tsp cumin
1/2 cup coriander leaves (chopped)
1 green chili
2 whole red chilies
4-5 teaspoons lemon juice
1/3 cup water or as required
Salt to taste
First, keep the hemp seeds in a pan on medium heat till the hemp cracks and keep them on a plate. Keep stirring the pan or stirring the seeds with the help of a spoon during this process so that the hemp seeds do not burn. Their taste becomes bitter due to burning.
Now in the same pan, roast cumin seeds and red chilies on a medium flame for 2 to 3 minutes and keep them on a plate.
Now wash and clean the coriander leaves with water and chop them and put them in the mixer jar.
Now in the same mixer jar add roasted hemp seeds, roasted cumin, whole red chilies, green chilies, salt and some water. Close the jar.
Now grind all the ingredients in the mixer, keep adding water as per the requirement in between. The sauce should neither be too heavy nor too thin. It should be lightly crushed. After grinding, add lemon juice and mix.
Delicious Indian hemp chutney or Bhang ki chutney is ready, you can serve it with rice, roti, salad, potato pieces, roti or paratha.
